I got the inspiration for this recipe from a wonderful website called Nourishing Days. I just tweaked it a little as I wanted to add some shredded coconut and almond meal to the cake and make a glaze instead of frosting.
1/4 cup coconut oil, melted
¼ cup coconut milk
½ cup shredded coconut
6 tbsp raw honey or maple syryp
1 tsp vanilla powder or extract
1 tbsp orange zest
Juice of ½ an orange
1 cup almond meal
5 tbsp coconut flour
½ teaspoon baking powder
Pinch of salt
½ cup coconut oil, melted but not hot
1 tsp honey
2 tsp orange zest
1 tsp vanilla
Pinch of salt
Preheat the oven to 180°C.
In a large bowl whisk the eggs, coconut oil, coconut milk, coconut, honey, vanilla, orange zest and orange juice until well combined. Now stir in the almond meal, coconut flour, baking powder and salt into the egg mixture until well combined and no lumps appear.
Take a small greased and lined cake dish and pour the mixture in. Place the cake in the oven for 40-50 minutes, until it is brown on top and a fork comes out clean. Leave to cool for about 10 minutes before removing from the pan.
For the glaze you can either follow my instructions below or if you would prefer it to be more like icing follow the instructions on the website at the end of the cake recipe.
To make the glaze whisk all ingredients together until well combined. Making sure the cake has cooled completely, pour the glaze over the cake and then quickly pop in the fridge to set.
You can either serve as is or sprinkle it with some shredded coconut. Enjoy!
